A Quick Review of Ground Flax Seed
Tonight I tried fried Swai, which is a tropical type of catfish/shark that you can buy in your local grocery stores. Normally I fry it after coating it in dry whole wheat flour. But that is not allowed on this diet. So I tried ground flax seed, or flax seed meal. Several years ago I had tried whole flax seed but that did not work. Needless to say, I wasn't sure this would work, either. And...it didn't.
First, it's very dark once cooking so it made the fish look very unappetizing. Second, it only partially stuck to the fish. Whole wheat flour sticks very well and makes a nice, but thin, crispy crust. This flax seed meal was thick, bulky even. Most of it fell off but stuck together as it continued to fry. It did not get very crispy. Finally, it soaked up the oil too much. I used olive oil. A lot of the oil ended up on the plate, and even after soaking all that up, the flax seed meal was very oily. I won't be using it again, unless I find some other kind of flour it will mix well with and work for frying fish and chicken.
On the other hand, flax seed is supposed to be very good for you. It has an equal number of grams of dietary fiber as it has carbohydrates, so it comes out as zero net carbs. It is a good source of fiber, fat, and protein, as well as calcium and iron. The package gives a good variety of ways to use flax seed meal such as, adding it to many foods. Many of these are also not allowed on the keto diet, however, some are, so this is something I will continue to use. It can be added to juices, so I am wondering about adding it to the bullet proof coffee. Well, not really. I'm actually thinking about using it to fry up with the ground spices I use when I have the occasional "feast" day of curry.
I should have taken a photo of tonight's fish, but I didn't think of it until after I ate it. As for the taste, in spite of the oiliness, and the ugly look, it wasn't bad tasting overall.
Check out the recipe for using whole flax seed -- it looks good. Just the seeds and water, additional seasonings if you want them, to make flax crackers or flax chips.
