How Do You Take Your Spinach?
Yesterday's carbs. Two 10 oz. bags of baby spinach simmered down with Eckrich smoked sausage. Yeh, I know. The sausage has sugar in it. I'll have to find another smoked sausage in the future. At least it isn't a lot of carbs.
I cut up and fried the sausage to give it a good seared flavor, then poured the sausage and fat over the baby spinach. Then I put about a cup of water in the skillet to get as much of that flavor into the spinach as possible and poured that over the spinach. This is what it looked like before and after. It was soooo good. I have never cooked spinach that way before. In fact, I have never cooked fresh spinach except for one other time, which then I cooked it with canned, diced tomatoes. That was good too.
Spinach nutritional facts:
Look at those net carbs!!! Three grams carbohydrates minus the two grams dietary fiber....ONE CARB for 4 cups of spinach. Now this bag says that 10 oz. makes 3 1/2 servings, but they had to have packed those in very loosely. Anyway, nice low carb meal for the day.
Today marks three weeks of basic Keto with very few carbs at all as I have been leaving carbs out most days. In the past three weeks I only have had one "bad" meal in which I had chili with saltines in it. Interestingly enough, after doing this for so long, (partially for a year) I couldn't even eat half of what I used to eat of that chili, so I was happy with that. Since then, I have had lettuce salad with some ranch dressing a couple of days, and the spinach yesterday. I don't own a scale so I have no idea about weight being lost. I just know how easy this diet is for me to follow.
Today I did a 17 hour water only fast, from midnight last night until just after 5 pm this afternoon. That was a little bit, but only a little bit difficult, but mostly because I wanted the coffee. I have a big mug here beside me now, though. I broke the fast with a couple home fried hamburger patties. None of those frozen pre-shaped patties for me. I have a couple left for later tonight if I get hungry again. If not, that's lunch tomorrow, or supper.
There it is, my 32 oz. mug of coffee.
